There are a decent number of servers running just the map pack, or the map pack, plus some originals. I imagine there will be alot more once the other booster pack comes out since it'll be 6 new maps.
As far as stability and bugs go, hopefully now that dice has been bought out, the addition of EA testers will help them finally get patches that just slove bugs, instead of creating some new ones for ever bug they solve.
EDIT- though the game it's self has improved, balance wise, and realism. especially with AA and planes, now only really crazy pilots are willing to fly, and smart AA that dosen't fire off missles where theirs a chopper dule (stick to the guns), and perhaps goes with atleast 1 tank, can get mad points, and literally be a map asset, giving your choppers especially a safe zone, but even the tanks know that with AA in the area, smart pilots will want to deal with it first before comming back and bombing the tanks. infantry fighting is much better, still lacking a bit just as a infantry game (lean mostly for me), but that with a balanced vehicle set up. and less exploits, where in less infantry gets bombed, because planes have to worry about AA, not just ranking up easy kills.
But yeah, bugs still linger, it's a hog on the resources, but it's fun with a good team on VOIP, though soon other games like this from more seasoned well engine developers (unreal 2k7, quake wars) will come out and basicly copy the tribes/planetside/BF2 set up, and hopefully improve on the game elements as well as the new engine elements. Red Orchestra for those that like the "tactical" shooters, with a touch of vehicles.
